A braai with braai bread – what else is there?

Take your braai to the next level with this deliciously decadent onion marmalade.

Ingredients:

  • ΒΌ cup (60 ml) olive oil

  • 6 onions, sliced

  • 4 cloves garlic

  • 2 whole green chillies

  • 2-3 tsp (10 – 15 ml) cayenne pepper

  • 3-4 Tbsp (45 – 60 ml) brown or white sugar

  • 1/3 cup (80 ml) water

  • 1/4 cup (60ml) red wine

  • 3 Tbsp (45 ml) balsamic vinegar

  • 2 bay leaves

  • Salt and milled pepper

Method:

  • Heat pan and add oil.

  • Add onions, garlic, chilli and cayenne pepper.

  • Cook until soft and brown around the edges. Remove chilli.

  • Add sugar and water and cook for 5 minutes

  • Add vinegar, wine and cook until jammy about 20-30 minutes, season well.

  • Once it becomes dark brown and jammy cool and store for up to 4 weeks in the fridge.
